Replicate SharePoint 2013 config with new 2019 farm

I plan to migrate our SharePoint 2013 (on premise) content to a new SharePoint 2019 (on premise) farm.
Then I will transfer all the site collections across using ShareGate desktop.
So after I have installed everything on all the new servers I will need to replicate everything as per the original:
Web applications, system/service accounts, services, content databases etc....
I will literally have 1 environment open on each monitor and step through this.
Of course I will overlook one/many things so am wondering if there is some sort of checklist out there that I can work to.
Any advice from those who have been before?
I have looked at SPDocKit but seems a bit expensive for a one off documentation.

    According to my understanding, I found a checklist for you as below. However, due to that ShareGate is a third-party tool, we are not familiar with this product, so it is recommended that you consult the product provider for more detailed information.
