How do I uninstall 2/9/21 Windows 10 updates?

I tried to remove updates but when I reboot to complete uninstall of updates they are automatically re-installed. After the update Windows does not find my Fanatec Clubsport wheel, pedals or shifter.

    Hi,
    Firstly, you could disable the Windows Update service.
    Type Task Scheduler and in the search box and hit Enter.
    In the left pane, navigate to: Windows - Update Orchestrater
    Double click Update Assistant.
    Click on Triggers tab.
    On each of the triggers (At login . . . etc.), double click and uncheck Enabled.
    Under Update Assistant, there is another event named Update Assistant CalendarRun.
    Do the same for all the triggers on that event.
    Then refer to the following link to uninstall the updates:

    When I click Update Orchestrater there is no Update Assistant to double click. The following are listed by clicking Update Orchestrater:
    Report Policies
    Schedule Maintenance Work
    Schedule Scan
    Schedule Scan Static Task
    Schedule Wake to Work
    Schedule Work
    Universal Orchestrator Starat
    UpdateModelTassk
    USO_UxBroker

    There is a separate Windows Update which when clicked has only 2 items listed:
    Schedule Start
    sihpostreboot
