Likely you'll lessen the impact to the farm by reducing the amount of data SharePoint needs to purge from the content database(s) at any one single run of the timer job. However, the first time you run it there may be increased impact. Since the process occurs within your content database(s), I would suggest planning the first run after making the schedule change during after hours.

The Audit Log Trimming is set to run monthly basis. I need to switch it to weekly. But before that I need to know what's the impact of the same to the SharePoint 2016 farm?

The impact is to clean up the audit log every week, no other impacts.
You could follow trevor’s suggestion to set Audit Log Trimming timer job.
