They cannot access your personal email, unless they also have access to the machine you work on.
Can exchange admin read personal emails?
I know that if your in office 365 from an organization/enterprise/school and install office on your personal computer for work use they can read your emails hosted on the exchange server. Or at least The emails on the email account apart of the organization. But if I use outlook and add my personal email in outlook does that go through the exchange server and they can read those as well or only the provided organization email account?

From the perspective of Exchange sever side, agree with michev that your Exchange admin won't have access to your personal email. As regards to your organization Exchange email account, they are able to access all the emails by means of Full Access permission or other ways like in-place eDiscovery.
