I want to add a shortcut from a sharePoint share to OneDrive. This to have a fast access to a common share and to access the folder through Outlook for attachements in both directions (download and attach). The problem I have is, that OneDrive syncs the shortcut folder from SharePoint with the local HDD. This easily ends up in a full disk. How can I avoid this?

It shouldn't end up with a full disk given files on demand is enabled, which it is by default. You can't really add a 'shortcut' in the way you need to use it. You could use the Outlook message insert "Browse Web Locations -> <SharePoint>" as an alternative. This doesn't require the OneDrive sync client.
