Have your PC originally came preinstalled with Windows 10 Home?
There is no related known issue that update will cause pro to home.

If your device has a digital license for Windows 10 Pro, check the Microsoft Store app for Windows 10 Pro. If it shows no cost to upgrade, then selecting that will switch to Pro without any cost.
Sometimes devices which shipped with Home might clean-install Home, even if a subsequent license for Pro has been previously installed. But you can easily switch back to Pro after the clean-install is done.
Also try activating with your pro product key
I just upgrade my Windows 7 Pro to Windows 10 Pro and it works without any issues, Also updated to latest version.
