Hi,
we are looking at replacing our current SSO provider with Azure AD for SSO.

This is a large programme to provide better security to our end-user devices with intune and various other products.

I wanted to get some clarity weather a device has to be enrolled into intune to use Azure AD SSO.

We have a large landscape of Linux devices (which cannot be enrolled) and I want to ensure these users can log into our various cloud applications using Azure AD SSO. The users already have office 365 accounts.

I appreciate that they cannot log in to their device using their Microsoft credentials and this is not an issue but i want to ensure they can log into all our cloud applications such as Salesforce, zoom, or any other applications which support SAML and is on the list of applications Microsoft supports

You don't need to enroll any device to leverage [Azure AD SAML SSO] (https://learn.microsoft.com/en-us/azure/active-directory/develop/single-sign-on-saml-protocol).
