AD Forest Consolidation with ADFS and ADMT and Office 365

I have some new questions for an upcoming forest consolidation project.

We currently have 3 forests with our main forest containing multiple child domains. ~3000 users
We also have AD sync deployed with MS-DS-ConsistencyGuid source anchor, UserPrincipleName set to Mail and criteria set to ObjectSid.
ADFS is configured to use alternate login and we have 3 federated domains.
All of this connects to a single Office 365 tenant.

the goal is consolidate all the forests/domains into the existing main forest.

Questions:

  1. Since ObjectGuid is unique per forest/domain, will I need to hard match each user post migration?
  2. Oddly enough I can't find out if Outlook Profiles are migrated with ADMT. Anybody know or will I need something like DeploymentPro?

I would really prefer not to reconfigure the sync anchors but I just see this going poorly...
