Windows team will change default settings based on feedbacks and design of the system.
The System Protection will take space but in case there is failure, you may restore your system.
Because this is new install of the Windows 11 and it might be unexpected issue, this setting is on by default.
Note that default is the recommendation and you may change it the way you want

Windows 10 install system protection of C: drive was off. Windows 11 install system protection of C: now on by default. From Windows 7 to 11 this has been bouncing around from on / off by default. Why is it now on by default for Windows 11?

IIRC it has been "on" for years, but I don't install Widows every month so.
