Desktop Outlook 2019 IMAP settings AND mail from shared OST on VDI

There is probably a better way to implement a solution for this application but this is where I am starting. I have a VDI deployment on Hyper-V using Windows 10 Enterprise as the vm with Office 2019 installed where I'd like the Outlook instance to appear to be persistent when the vm reverts back to the Checkpoint by accessing a shared OST file without using Exchange Server. If there is no way for this to work efficiently, what would the best practice be?
