The latest updates for Visual Studio 2019 listed in these release note URL:

2019: https://learn.microsoft.com/en-us/visualstudio/releases/2019/release-notes

Are not appearing as Software Updates even after selecting Visual Studio 2019 as a product on our SUP and a full sync.

Any ideas?

Not all updates are published to the WSUS catalog. What is and isn't published is determined by each product group and not WSUS or ConfigMgr thus selecting the product doesn't mean the updates are actually available. If the update exists in the Microsoft Update catalog (http://www.catalog.update.microsoft.com/Home.aspx), then it is possible to import the update into WSUS so that it can be deployed using software updates in ConfigMgr: https://learn.microsoft.com/en-us/mem/configmgr/sum/get-started/synchronize-software-updates#import-updates-from-the-microsoft-update-catalog
