I had a similar problem. Word 365 stops saving files to where you originally put them. They get saved as weird temp files with f-ed up names like .~WRD0002. The only way to find them is to reveal hidden files and go to .TemporaryItems and hope that you find it.
I watched the time of saving carefully every time I saved the same file. At random instead of saving as file.docx into the correct folder, it tried to save the file as ".~WRD0002" into a folder in the .TemporaryItems folder.
This caused me incredible grief as I inexplicably lost two project reports in a row.
Microsoft needs to fix this INCREDIBLY BAD problem. No point in calling them. They will surely say, "Have you tried turning it off and then back on again?" And I would get no where.
I now have an alias to the .TemporaryItems folder, so I can go there to refund the lost documents.
I AM PAYING $79 PER YEAR FOR A BAD PRODUCT!!!

I understand your feelings.
Currently, I suggest you go to folder /Library/SystemMigration/History/Migration-UUID/QuarantineRoot/, check whether you can find these files.
If it does not work, in addition to using iCloud, have you synced files to OneDrive?
If yes, you may search these files on OneDrive, then you may download files to your device.
Besides, do you have Time Machine backups?
If yes, I suggest you use Time Machine to restore the previous save.
Before upgrading macOS, it's best make a backup of your Mac, in case the changes bring something unexpected like data loss.
As this issue maybe related to system update, I also suggest you post a new question on Apple community.

I found your thread last night and have recently helped two Mac users that have experienced the same problem. One was on OS 11 Big Sur. The other was on 10.15.7. Both used the latest version of Word for Mac (now 16.58) and were in the habit of saving files to iCloud Drive >> Documents or iCloud Drive >> Desktop. (the option was selected to let iCloud Drive take over the Documents and Desktop folder on the Mac). In one case a lengthy report worked on over several days went missing. In the other scenario it was about 7 word documents that were regularly saved and edited. All were saved to iCloud. With one of the users -- it indicated that the last location for the files was iCloud >> Trash. We even tried logging on to iCloud.com in the browser and trying to recover recent files. No files were available to recover. The last save date of the files was 2/27. (In a separate but related issue -- there was a Time Machine backup made on 2/27 but both the Documents and Desktop file were not eligible to be restored from). Curious as to how this issue progressed for you.....
