Error 500 when trying to send events to Azure Event Grid

I am seeing a very generic error when trying to publish events to an event grid. I have checked that we do have access to the event grid already. We were actually able to send events to this grid before but around 10-12 days ago, we have suddenly been running into this error without any changes on our end. This is a consistent, not intermittent issue. Logs have not been very helpful but this is the error I have.
