You'll find the Microsoft Edge (Chromium) bookmarks/favourites over here:
C:\Users\<Username>\AppData\Local\Microsoft\Edge\User Data\Default\Bookmarks
("Bookmarks" is the actual file).

This answer is out of date. The current directory as of 8/17/2021 is: "AppData\Local\MicrosoftEdge\User\Default". However, the Default folder is empty.
I have MS Edge 98.0.1108.50, and as I see it stores my favourits in the textfile Bookmarks, stored in folder
C:\Users*...\AppData\Local\Microsoft\Edge\User Data\Profile 1.
I see no folder named "Default" here.
This is merely a text file. Can it be edited without issues? For example, I am looking to delete the "Other favorites".

Can this location be reset with group policy??
With this setting it will go into their Citrix profile and be lost whenever the profile must be reset...
e.g. //fileserver/users/%username%/favorites
We do have folder redirection enabled.
MS' documentation is super confusing -- one cannot easily tell which version the documentation is for, old or new Edge.
Not sure what you mean by "reset", if you mean to move it then I don't think it's supported, and it's not recommended to modify this.
Reset Citrix profile, where this would be stored, is a common thing to do to fix Citrix problems.
Probably have to look into export/import bookmarks, can this be done with PowerShell??
