I suggest you go to the Edge Settings -> System -> Switch off "Use hardware acceleration when available". See whether it helps to fix the issue.
If you are using an Nvidia graphics card then I suggest you refer to the steps mentioned in this link.
Steps:
1) In System Tray, right-click NVIDIA Settings app, select NVIDIA Control Panel
2) Under 3D Settings, Go to Manage 3D settings
3) Select the Program Settings tab and click the Add button then select Microsoft Edge.
4) Look for the feature - Antialiasing - FXAA and select Off from the drop-down.
5) Click Apply. You might need to restart Edge Chromium.

I want to confirm with you whether the issue occurs with only The new Edge browser or you are able to see this issue with the other apps too?
If you open the Settings page in the Edge browser or view the Settings and more options, does that also looks blurry?
Please inform us of your OS build version and the Edge browser version. Are you using any high definition displays?
If possible please try to provide some screenshots of the issue. It can really help to understand the issue in a better way.

I suggest you open the Settings -> System -> Display in your Windows 10 OS.
In the Scale and layout category, Set Change the size of the text, apps and other items dropdown to 100%.

Then after click on the Advanced scaling settings option.
Toggle and turn on the option Let Windows try to fix apps so they're not blurry.

It may help to fix the blurry text issue.
