Hi @matanalter-4296,
It’s not easy to recommend anything as it entirely depends on what you have/need to monitor, you don’t get management packs just to have them.
But most likely the basic ones like:
Active Directory
Windows Server
SQL Server
PKI (if they need to be monitored)
Exchange (if you use it)
DNS / DHCP (if you use these Windows roles)

Hi @matanalter-4296,
want to add some other I use very frequently:
Microsoft IIS¨
Microsoft Cluster
DHCP
Windows Server File and iSCSI Servidces
Leon has put together a great overview of the most used:
SCOM 2019 Management Packs
https://social.technet.microsoft.com/wiki/contents/articles/52876.scom-2019-management-packs.aspx
As already mentioned you install and import only ther Management Packs for the technologies you have/want to monitor. Each additional MP puts a performance penalty on your agents and your SCOM MG as they need to run discoveries from the different MPs-.
One more thing, I would definiteley recommend you also some of the awesome community MPs that are filling some gaps:
10 Free SCOM Management Packs
https://squaredup.com/content/infographics/10-scom-management-packs-you-can-download-for-free/
I very often use the SCOM Agent Managememnt Pack from Kevin Holman, the one from Tao Yang - OpsMgr Self Maintenance Management Pack.
Also the PKI Validation MP from Raphael Buri.
Hope this helps you out!
