I would like to use Teams channels in a group to feed a Sharepoint. However, I'd like to know if the folder created throught the channels in Teams can be located elsewhere than at the root of the Sharepoint.
Can I choose where to stock my folders created with Teams ?

No, you cannot do like that.
When you open the channel file folder in SharePoint document library, it will only take you to the root of the library.
As a workaround, you could add the SharePoint folder URL as a website tab in your channel. Or create a new document library in SharePoint with the folder/ file structure you want and add that as a SharePoint tab. For more details, please refer to this article.
