None. Should be fine.
If you see any weird events in the logs, reboot the server but you really shouldnt have to.
Just make sure the new OU doesnt have any weird denies or GPOs.

No issues with moving the Exchange servers to a different OU.
Now on to seeing if this resolves my issue with adding member servers to my DAG!

Agree with Andy that there would be no problems moving Exchange servers to a different OU.
