Essentials allows you to install the server, cancel the Essentials config, install the hyper V role, then install Essentials as the VM. But only one VM is allowed regardless of the hypervisor used.

The licensing is for the host machine. Yes, only one essentials virtual machine. The host needs to be licensed to cover all the physical cores.
