What version of Office did you use?
How did you want to delete a file from Recent list?
Which product did you want to remove the file?
I suggest you go to registry editor and check if you can find the location:
Note: Serious problems might occur if you modify the registry incorrectly. For added protection, back up the registry before you modify it.
For Word:
HKEY_CURRENT_USER\Software\Microsoft\Office\16.0\Word\User MRU\xxxx_xxxxxxxxxxxxxx...\File MRU
For Excel:
HKEY_CURRENT_USER\Software\Microsoft\Office\16.0\Excel\User MRU\xxxx_xxxxxxxxxxxxxx...\File MRU
You can check if you can find the file you want to delete, delete from registry editor and the restart Word or Excel.

It's MS Office 2019 purchased last month
I have the office icon pinned on the taskbar which I open to easy access to recently used files. By now, only after a month the list is 2 pages long, basically useless
