If I'm reading it correctly, I can use a fully functional evaluation version of Windows Server in my production environment for almost three years.
180 days for initial eval, and 6x 180 days for each re-arm of the eval.
Is this correct?

If this is not correct, could you help me find documentation clarifying this?

Thank you

    Evaluation.
For evaluation (or test or demonstration) use, you may not sell the software, use it in a live operating environment, or use it after the evaluation period.

Probably 2.5 years; you can slmgr – dlv to see the remaining rearms and details. Windows Server evaluations are not licensed for commercial / production use.
