Looking for the best way to upgrade my VM (OS) and still be able to sysprep/capture.

I upgraded my Win10 Hyper-V vm from 1703 to 20H2. I had no issues doing that, but ran into all sorts of hell when it came to sysprep. This app, that app....I ran every PS there was out there to remove apps that broke sysprep.

So, I'm going to upgrade it again, but I'm looking for the most proper way to do so
without any apps causing issues again with sysprep. One thing I've done is make an internal network connection only between the VM and the MDT Server. I just do not want to pick up appxpackages or provisioned packages and whatever else that will cause sysprep to bomb. I spent two weeks removing an app, and another and another, ran PS's that 'removed' all of these in one click, to finally get sysprep to run; it rebooted my VM
and the admin acct was locked out. Oh, and all the apps were back.

I'd just like to know the proper way to upgrade an OS on my VM and be able to sysprep/capture it.

Thank you for posting in Microsoft Q&A forum.
To my knowledge, Microsoft does not support the use of Sysprep to create images of an installation that has been upgraded. SysPrep is only supported in clean installations.
But below article provided a solution to run SysPrep on upgraded windows by modifying the registry.
And for windows 10, we need to delete all non-standard Modern applications separately (not in the provision mode) installed from Microsoft Store by the system users.

On the MDT forum, before shutting down that knowledge group, people are creating images and using a checkpoint so you can work on the vm, sysprep it, capture it and then reapply the vm in its non-sysprepped state.
The vm with the prior OS has never been sysprepped, since the checkpoint was always reapplied. I believe it's more to do with all the apps MS shoves into their OS.
You can't be forced to completely rebuild images from scratch just to go to a new OS. MDT has a task to upgrade vm's for this purpose.
