Based on my understanding, hot copy of a vhdx might cause data loss, and Microsoft recommends that you turn off the VM before copying the .vhdx file.

Yes, I shut down the VM and copied the data after mounting the VHD.

Yes you can copy a VHDX file even though it is being used.
