I purchased an X1 Carbon Seventh generation for a masters program in Health Informatics that I recently enrolled in. I need several pieces of software that are not supported on my Win 10 Home (1909). I was able to get a key for upgrade to Win 10 Education. I changed product key to the new one, but still will not update. What do I need to do?
You must check the Product Key for Windows 10 Education.
You can run the changepk.exe command-line tool to upgrade devices to a supported edition of Windows 10:
changepk.exe /ProductKey <enter your new product key here>

Any error message occur when you activate your Windows 10 Education product key? If yes, please post a capture here.
Is it an upgrade key or Windows 10 Education key?
If it is an upgrade key, we could activate through Windows Store.
If it is a Windows 10 Education key, we could run "slui.exe 4" to activate through a phone call.
