When I logged into my Outlook this morning (which is set to Dark Mode) the user interface had a dark background, but the messages reverted to a white background and there is no longer a sun/moon toggle to change this back. Where did it go?

File-> Options-> General
Then next to the Office Theme: Black selection, disable the option; Never change the message background color.
Hi @JamieP-8238,
Does your issue has any update now?
According to my tests on Outlook 365 version 2107(Build 14219.20000), the sun/moon toggles would only be displayed when we working with black mode and uncheck the "Never change the message background color" in settings. So agree with RobertSparnaaij, please first check your settings as mentioned above.
