Agree with Jason, I happened to have done setting update channel for M365, as follows


After that we can check device status to see whether the deployment status is successful. More details please refer to:

Assuming you are referring to M365 apps on managed Windows endpoints, then Intune has no ability today to control updates for M365 apps (or classic Office apps). The most you can do is use an Admin template or the Settings cCtalog to configure the update channel for M365 Apps.
