Did you mean you would like to bulk adding or modifying mail users and mail contacts in your Exchange organization?
Or you would like to add and modify the contacts which are created in Outlook?
If you would like to modify the mail users and mail contacts in your Exchange organization, below are the regular identifiers:
Name
Alias
Distinguished name (DN)
Email address
GUID
In your case, if you would like to also change the Name, alias or Email address of the contacts, I suppose you may need to use GUID to identify the object.
