Do Teams meetings appear in the Teams admin events audit log?

Also, a Teams meeting can't be traceable by anyone if it doesn't appear within the chat section of a work Teams account?

No. This article lists all events that are logged for user and admin activities in Teams in the Microsoft 365 audit log. Please pay attention to Teams activities section.

a Teams meeting can't be traceable by anyone if it doesn't appear within the chat section of a work Teams account?

If this meeting is scheduled in advance, user can see the details of this meeting in Teams calendar by double clicking that meeting. Then, user can see details by different tabs.

If this is an ad hoc meeting, user cannot trace it unless participants chat or start a recording during the meeting.

@SharonZhao-MSFT It was an ad hoc meeting. So not even a work Teams admin can trace it?

If you just want to see the basic information of this meeting, as a Teams administrator, you can log in to Microsoft Teams admin center > Users: Manage users > choose any user who attended that meeting > open Meeting&calls tab. It will show the meeting as below. You can click into specific meeting and check it.

It contains meeting ID (not meeting title) and participants name. You can distinguish meetings from the Start time.
