Yes, it is possible to update Office offline by Office deployment tool.
But you need to prepare a shared network folder that can be accessed by client computers to store the Office installation content of specific version.
There are two ways to make the updates via ODT:
- Use the ODT to install Microsoft 365 Apps again to update Office to the specifice version.
By comparing the installation content of the shared folder, only the files that have changed in the new version will be updated.
To achieve it, please specific the installation path (Such as "\server\updates") in configuration file.

- Use the ODT to download the Office installation files from CDN (Office Content Delivery Network) to the shared folder, then point client computers to receive the updates from the shared folder instead of from CDN (Office Content Delivery Network).
To have Microsoft 365 Apps get updates automatically from a network share (Such as "\server\updates"), please include the following line in configuration.xml file when installing Office:
