How do I rewrite a message body with a Outlook add-in?

I'm devising an Outlook add-in that can re-write the body of a message if it meets certain criteria (similar to what an ad-remover would do).

I've seen Microsoft's tutorial on how to make a compose add-in (https://learn.microsoft.com/en-us/office/dev/add-ins/tutorials/outlook-tutorial), which alters a message being composed, but I don't know how to access the DOM of a message about to be presented so that I can modify it. Has anybody done something like this, before?
