MS 365 Apps - Update to specific version

Hi all,

How do you install the monthly updates in Semi-Annual Enterprise Channel for the previous version?

There are 2 active versions in that channel, both are receiving updates.
Downloading / installing the channel's updates will usually use the latest version.
What do I need to do to use the latest update of the previous version? So no new features but just the fixes.

I'm aware of the fact that I could download / install a specific version by specifying the version number.
But I'm looking for an automated process using the CDN or install from a local source.
What do you do to keep the previous version a bit longer?

In January and July, the monthly update can include feature, security, and non-security updates. In other months, the update can include security and non-security updates.
Office automatic update is enabled by default. You can also set a specific update version number or update source through Group Policy.

What do I need to do to use the latest update of the previous version? So no new features but just the fixes.

Please note, we're unable download the separate downloads of just security updates or just non-security updates for Semi-Annual Enterprise Channel, you could only find the lists for the security updates and non-security updates.

Besides, to find the details of update process for Microsoft 365 Apps, please checkout the reference "Overview of the update process for Microsoft 365 Apps".
Update executable program for Office will detect that updates are available from update location (Such as CDN, your local shared folder) and download the files which are different from the local computer.
We are unable to control it to download security, and non-security updates separately.

What do you do to keep the previous version a bit longer?

For a better user experience, we do not recommend disabling Office updates.
But, if you need to receive security updates and non-security updates, you have maken a right decision that set Semi-Annual Enterprise Channel. Office with this update channel update the version number slowest.

Thanks, but I'm not talking about separating security and not security updates.
I want to install the usual updates incl. both kinds of fixes.
Let's take a look at the current situation:

Updates for the versions 2008 and 2102 both are available. Version 2008 will be supported until march 2022.

But if I update a computer with verison 2008 I will not get build 13127.21792 but will update to the most recent version 2102 by installing 13801.21004.
How would I prevent this from happening and install 13127.21792?

Specifying that build through GPO would require me to review that policy every month and update the policy to the most recent 13127 build. That doesn't make sense.
Is there any better way to control when to update to the new version?

Currently, there is no relevant settings to let Office only get updates to newer build number with the same version number. To achieve it, you need more controls and manual efforts.

In addition to using Group Policy to limit the Office version as you said, please check whether following methods are helpful. The reference is "Choose how to manage updates to Microsoft 365 Apps".

You could set the specific update source for Office to detect Office updates, it means control the version number of updates by controlling the update source.
You could also use Microsoft Endpoint Configuration Manager to distribute specific updates for end users. For more, here is an article "Deploy Office 365 Updates Using SCCM".
