I am deploying an autopilot profile that it is supposed to let the user choose the language (region), but although i choose another language, different from default (English) , it does not ghange when i finish autopilot process and enter to the desktop.
Any help will be appreciate.

Yea, for me this a known problem, which actually lies in Windows 10 setup, not so much in autopilot. I have tested, that if I do language and keyboard selections in OOBE, and install the computer as a home user (without autopilot), the end result will still be a mess. This might vary in different countries, but Finnish layout is a mess. Based on my experience, there are 2 options;
Use local language W10 installation media which will honor your location.
If still want to use english UI (like I do), manipulate regional settings with registry (powershell). Remember that there are language keys under local machine.default and under current user hives.
You can also assign language packs from the Microsoft Store for Business, or create Win32 apps to install additional language packs and set the language. An example of Michael Niehaus's script https://github.com/mtniehaus/AutopilotBranding
