How to renew Certificate now that EAC no longer supports it

For decades, I've always used the Exchange EAC to generate, install and assign services to certificates. It looks like with the recent CU, this functionality is no longer available. I'm completely lost, no clue how to do the simplest of tasks, it's become nearly impossible.

I'm struggling with powershell how to do the following:
1) create a new cert. There used to be a web page to do this, now it looks like it's all going to be from commands. Is there a 1:1 example of what goes where and a sample powershell for this? Or do we use IIS now?

2) renew a cert. There used to be a web page for this also. I used to right click, select renew, type the path and done. What is the command to do this?

3) install the renewed certificate. There used to be a web page for this also. I used to click a link in the EAC, select the certificate and done. What is the command to do this?
