Or for your dedicated case, you could utilize the procmon tool to monitor to identify which file or process has been locked instead of deleting from Local_username.

1.Please help to check the event logs to verify the disconnection error message at the same time each day.
Event log checking:
TerminalServices-RemoteConnectionManager and TerminalServices-LocalSessionManager logs to view information about connections.
Step 1: Press Windows+R to open the Run dialog, enter eventvwr (or eventvwr.msc) and hit OK.
Step 2: Navigate to Event Viewer\ Applications and Services Logs\ Microsoft\ Windows\ TerminalServices-*
2.Is there any scheduled task has been setup in your environment if the disconnection occurred at the fixed time every day?
You could check the task history at the issue occurrence time to verify.
3.Is there any session time limit policy has been enabled under below path?
Computer Configurations-> Administrative Templates-> Windows Components-> Remote Desktop Services-> Remote Desktop Connection Host-> Session Limits
4.Is there any warning message prompted before disconnection or shutdown without notification.

1.What is the error message or problem behavior when you said the Credential folder hangs?
What is the folder path?
2.I want to try to prevent it from redirecting to local_username.
By default, to enable FSLogix there are two profile folders created : username and Local_username, you could remove the latter one each time the user log off if configured correctly:
DeleteLocalProfileWhenVHDShouldApply-->1: delete local profile if exists and matches the profile being loaded from VHD.
