As you mentioned earlier, you can execute the command Set-SPOTenant -EnableAIPIntegration $true to enable support for sensitivity labels, no sequence of steps needed.
The configuration process is not that complicated since “Files & emails” scope is already available. Just make sure the scope is selected under “Define the scope for this label” while editing the sensitive labels, and publish it with a policy after.
Note: these two scopes do not cover one another. If you have selected “Groups & sites” but not “Files & emails”, the labels will not be available for tagging for Office files. If you want to use these labels on all these locations, select them both.
If this is a user-specific issue, you can check if the user’s certificate is valid or needs a renewal.
You can also try disabling Modern Authentication for Office clients on Windows devices.
The registry key path on higher version of Office clients should be
HKCU\SOFTWARE\Microsoft\Office\16.0\Common\Identity\EnableADAL

I’m afraid not. Everything you can customize is listed under Global navigation settings and there is no setting to hide specific panel for the time being.
Since this is a new feature currently in the status of “In development”, it will keep improving and have more function to come.
You can keep updated, or submit this idea via the SharePoint UserVoice forum so that Microsoft teams take it into consideration.
No, the columns will not change accordingly, created or deleted during the sync.
The columns need a mapping relationship before you can copy the data, or it will return error as it cannot find the corresponding field to fill in values.
You will need to handle the column changes before you use the flow or PowerShell for the sync.
