I have checked that Win 8.1 32 bits computers are up-to-date. To be sure, I have installed manually KB4511872 and then I have rebooted and tested IE mode again, but the problem is still there.

I also reset to default IE and reinstalled IE according to the doc you told me. No results.
I have run the system file checker tool and no errors.
I experience the problem in all our Win8.1 32 bits in my company, what takes me to think that it could be something like a bug or similar.
As I said before, Win8.1 64 bits and Win10 don´t have this behaviour and IE mode works fine.

Thanks for your response. The information in edge://version is the same in the correct and incorrect scenarios. I have attached the screenshots. I knew the Microsoft doc you told me about the Admin privileges error and I can´t find any coincidence.
Besides, I have checked the similar thread and I dont find in my machine the expired Microsoft certificate that solves the problem there.
I have already tried running edge as administrator and I get the same results: sometimes works fine and sometimes not.
Also I have reviewed the event viewer and I get this one when occurs the wrong scenario: "[5312:3488:1116/090631.915:WARNING:web_contents_internet_explorer_tab_host_observer_win.cc(208)] Creation of Internet Explorer mode tab failed: 14"
