Is there a way to have this monitor only run or only produce alerts monday - friday? The UI doesn't allow it but can I add some code to the xml to stop the alerts over the weekend?

Based on fixed weekly schedule should work for you.
But that breaks the sliding time window requirement. If I update to your screenshot then won't it alert after two occurrences any time during that week window?
As I understand it, "Trigger on Count" will only alert you at the end the
time window you specify. "Trigger on Count, Sliding" will alert as soon as
the count threshold is exceeded.
I believe that is correct so in your example I wouldn't get an alert until Friday night.
I am looking to get an alert if two occurrences happen within 30 minute but I don't need this alert over the weekend
